- Haddock is a lean white flaky fish, rich in Omega 3. The fish is traditionally kiln smoked by the Kirwin Brothers of Grimsby, who have been perfecting the process for generations. The fish retains the smoky flavour when classically cooked in a pan of milk. Great in kedgeree, fish pie or gratin (as pictured).
