Frozen fish: protecting quality and nutritional value
Frozen fish can be a practical choice when your kitchen needs to plan portions and stock. Check the product specification and handling instructions as carefully as the species and cut.
Look at the product, not just the format
The NHS includes fresh, frozen and canned fish among the options for a balanced diet. Fish provides protein, vitamins and minerals; the exact nutritional profile depends on the product. Read the NHS guidance.
For coated, smoked or prepared products, review the ingredients and nutrition information separately. A frozen label alone does not describe the recipe, portion size or preparation required.
Protect quality during storage
Follow the storage instructions and dates on the pack. Keep packaging well sealed: exposure to cold, dry air can cause freezer burn and affect food quality. Freezing does not kill all bacteria. Read the Food Standards Agency’s freezing guidance.
Plan thawing before service
Follow the product’s instructions and your kitchen’s food safety procedures. The Food Standards Agency recommends defrosting in the fridge, using a container to catch drips, and allowing enough time for the food to thaw fully. Check whether the product is intended to be cooked from frozen.
Make the pack work for your kitchen
Ask about pack weight, portion count and whether the product is individually frozen or supplied in a block. Match your order to the storage space and preparation time available, and request the current specification before agreeing supply.
