Fish and chips in the UK: a practical buying guide
A useful fish and chips buying brief starts with the dish you want to serve. Agree the fish, portion and preparation before comparing quotations.
Start with your menu
Cod and haddock are familiar choices, but preferences vary across the UK. Seafish’s 2026 study found regional differences in the species sold by fish and chip shops. Read the Seafish study.
Describe your main dish, smaller portions and any specials separately. A clear brief helps you compare suitable products without assuming that every fillet has the same size or preparation.
Agree the details that affect service
- Species and cut: name the fish and whether you need fillets or portions.
- Portion range: include a target weight or size, plus skin and bone requirements.
- Product format: ask for fresh or frozen availability, pack size and the relevant product specification.
- Quantity: give an approximate volume and say whether this is a regular order or a one-off requirement.
Compare like for like
Read the pack information alongside the price. Consider the preparation your team will carry out, the storage space available and how the product fits your service schedule. For a new item, ask which specification can be supplied before making it part of your regular menu.
Include your delivery postcode and preferred date in the enquiry so arrangements can be discussed alongside the product.
